Role Description

About the Role:

An established seafood restaurant in Regional NSW is urgently seeking an experienced Head Chef to lead the kitchen. This is a hands-on leadership role for a chef with strong seafood expertise who can maintain consistency, drive menu quality and lead a kitchen team in a busy, high-turnover environment.

Key Responsibilities:

  • Lead all aspects of kitchen operations, including menu planning, food preparation and service execution.

  • Design and refine seafood-focused menus, including seasonal and signature dishes.

  • Ensure consistent quality, presentation and flavour across all seafood and accompanying dishes.

  • Recruit, train, roster and supervise kitchen staff, including sous chefs, cooks and kitchen hands.

  • Manage stock control, supplier relationships and ordering for fresh seafood and other ingredients.

  • Monitor food costs, minimise wastage, and support the restaurant's commercial performance.

  • Ensure full compliance with food safety, HACCP and WHS requirements.

  • Maintain a positive, safety-focused kitchen culture during high-pressure service periods.

Skills & Experience Required:

  • Certificate IV in Commercial Cookery or equivalent (highly regarded).

  • Proven experience as a Head Chef or senior Sous Chef in a seafood or high-volume à la carte restaurant.

  • Strong technical knowledge of seafood preparation, cooking techniques and quality standards.

  • Demonstrated leadership, rostering and staff-management experience.

  • Sound understanding of food safety, HACCP and WHS requirements.

  • Ability to perform confidently under pressure in a fast-paced kitchen.
