Role Description

Head Chef – Fine Dining Indian Restaurant

Position Overview

The head chef is a critical leadership role responsible for overseeing all culinary operations within our high‑end fine‑dining Indian restaurant. This position requires exceptional expertise in traditional and contemporary Indian cuisine, advanced menu innovation skills, and the ability to maintain uncompromising standards of quality, presentation, and service.
The role aligns with
that of a chef, involving planning, organising, supervising, and preparing food in a commercial kitchen.

Key Responsibilities

1. Menu Planning & Culinary Innovation

  • Design, plan, and execute premium fine‑dining Indian menus, including degustation, regional specialties, and seasonal offerings.

  • Develop new dishes using advanced culinary techniques while preserving authenticity of Indian flavours.

  • Analyse food trends and customer preferences to maintain a competitive and innovative menu.

  • Ensure all recipes, portion sizes, and presentation standards are documented and consistently followed.

2. Food Preparation & Quality Control

  • Oversee and participate in the preparation, cooking, and plating of high‑quality Indian dishes.

  • Maintain strict quality control across all stages of food production, ensuring consistency in taste, texture, and presentation.

  • Conduct regular tasting sessions and kitchen audits to uphold fine‑dining standards.

  • Ensure compliance with dietary requirements, allergens, and special requests.

3. Kitchen Leadership & Staff Supervision

  • Lead, supervise, and mentor chefs, cooks, apprentices, and kitchen assistants.

  • Allocate duties, manage rosters, and ensure adequate staffing levels for peak service periods.

  • Train team members in advanced Indian cooking techniques, food safety, and fine‑dining presentation.

  • Foster a positive, high‑performance kitchen culture.

4. Inventory, Cost Control & Supplier Management

  • Manage procurement of premium ingredients, spices, and specialty Indian products.

  • Monitor stock levels, conduct inventory checks, and minimise wastage.

  • Negotiate with suppliers to ensure quality and cost efficiency.

  • Maintain food cost targets and contribute to overall profitability.

5. Compliance, Safety & Hygiene

  • Ensure full compliance with Australian food safety regulations, WHS standards, and internal policies.

  • Implement and monitor HACCP procedures and safe food‑handling practices.

  • Oversee cleanliness, sanitation, and maintenance of all kitchen areas and equipment.

  • Conduct regular safety briefings and ensure staff follow all hygiene protocols.

6. Operational & Administrative Duties

  • Collaborate with management on menu pricing, kitchen budgets, and operational planning.

  • Maintain accurate records including stock usage, wastage logs, and staff training.

  • Participate in strategic planning for events, banquets, and special culinary promotions.

  • Address customer feedback related to food quality and dining experience.

Skills, Experience & Qualifications

  • Certificate IV in Commercial Cookery or equivalent (highly regarded).

  • Extensive experience (5+ years) in Indian cuisine, including regional and fine‑dining styles.

  • Proven leadership experience as a Head Chef or Senior Chef in a premium restaurant.

  • Strong knowledge of Indian spices, cooking methods, tandoor operation, and modern plating techniques.

  • Excellent communication, time management, and team leadership skills.

  • Ability to work under pressure in a fast‑paced fine‑dining environment.
